Malic acid, also known as malic acid (E296), is a naturally occurring organic acid that is found in apples, grapes and other fruits. It has been used safely and successfully in the food industry for decades due to its excellent properties. But malic acid can do much more: it offers a sustainable and effective solution to one of the biggest problems in water treatment - limescale.
What is malic acid?
As the name suggests, malic acid is found in apples - but also in many other fruits. Its chemical formula is C₄H₆O₅. It has two carboxyl groups (-COOH) and one hydroxyl group (-OH).
In water, the carboxyl groups can release protons (H⁺). They then become carboxylates (-COO-), i.e. negatively charged "hooks".
These hooks attract and hold positively charged minerals such as calcium (Ca²⁺) or magnesium (Mg²⁺).
The hydroxyl group also helps to make this bond particularly stable: It ensures that the metal ion is held by several sites at the same time. In technical terms, this is called a chelate ring (complexation). In layman's terms, this is like a hand that closes not just one, but several fingers around the ion.
How is lime formed?
Lime is nothing other than calcium carbonate (CaCO₃). It is formed when calcium and carbonate ions combine in water.
- First, some ions meet by chance and form tiny
- Crystal nuclei - these are the "seeds" for lime crystals
- When a germ becomes stable, many more ions accumulate
- A crystal grows from it
Over time, the crystals adhere to surfaces such as pipes or heating elements and grow into hard limescale deposits.
No limescale without crystal nuclei. It is therefore crucial to prevent nucleation.
How does malic acid work?
1. capture minerals (complexation / chelation)
Ca²⁺ + C4H4O5²- → CaC4H4O5 (calcium malate)
Technical term: complexation.
Simply explained: malic acid grabs the ion with several fingers at the same time. This makes the bond stable.
Why does this help?
- Calcium malate is soluble in water.
- This means that it remains distributed in the water and does not settle as solid limescale.
In other words, the salt floats in the water like sugar in tea, instead of crystallizing at the bottom.
2. rendering harmless (sequestration)
The minerals are still in the water, but they are "packed away" and can no longer do anything. This is technically known as sequestration.
A comparison: the ions are still there, but strapped in like children in a car seat. They are present, but cannot cause any damage.
3. block start points (threshold effect / overstoichiometric)
What makes it special: Malic acid works even in very small quantities. In technical terms, this is known as the threshold effect or a super-stoichiometric effect.
Why?
- Malic acid attaches itself to the crystal nuclei, i.e. the very first starting points of limescale formation
- It blocks the sites where new ions could dock
- The germ disintegrates again before it can grow
A single malic acid molecule can block several germs in succession. It docks briefly, disrupts the structure, dissolves again and then attacks the next germ.
Comparison: It's as if you always remove the bottom card every time you try to build a house of cards. No matter how many cards there are, the house will never be built.
4. soft instead of hard crystals (crystal modification)
- Normally calcite is formed - hard, compact, strongly adhesive
- Malic acid produces aragonite or vaterite - soft, porous, crumbly
Why?
Malic acid settles specifically on the surfaces of certain crystals and slows down growth there. As a result, calcite cannot form as easily and other, less adhesive forms prevail.
The result: even if some calcite does form, it remains loose and is rinsed out by the water instead of sticking rock-solid.
5. keep particles apart (dispersion / double layer)
Technical term: dispersion, electrical double layer.
Simply explained: Imagine all particles had the same magnetic pole. They cannot clump together, but remain separate in the water. So they are simply flushed out.
